Jin 8 is a small cocktail bar opening on Rutland Road in July. The concept is built around Shanxi province in northern China and the spirits that come from it — Fenjiu in particular, the historic clear baijiu from Fenyang. The signature list is eight Fenjiu-based cocktails sitting alongside classics. The vibe is intimate and considered: ambient music, no happy hour, no specials. People come for the drinks and the story.

What we need from you

• Current Victorian RSA

• Right to work in Australia

• At least one year on a cocktail bar (independent or small-venue preferred)

• Available Friday and Saturday evenings, finishing 1am

• Sound classic-cocktail fundamentals — build, stir, shake, dilution

• Calm, presentable, on your feet for a six-hour shift

What we'd love

• Any experience with baijiu or Fenjiu, or genuine curiosity to learn the category

• Mandarin or Cantonese, given the neighbourhood

• Opening-team experience
