Task & responsibilities
- Receiving and inspecting meat carcasses and primal cuts to assess quality and freshness
- Breaking down carcasses into primal, sub-primal, and retail cuts using knives, saws, and other butchery equipment
- Trimming, boning, rolling, and tying cuts of meat to prepare them for sale or further processing
- Mincing, slicing, and grinding meat to produce mince, patties, and other products
- Preparing and making smallgoods such as sausages, salami, ham, and other cured or processed meat products (if applicable)
- Marinating, seasoning, and preparing value-added meat products (e.g. kebabs, stuffed roasts)
- Operating and maintaining butchery equipment including band saws, meat slicers, grinders, and vacuum packaging machines
- Weighing, wrapping, labelling, and pricing meat products for retail display
- Managing stock rotation, monitoring use-by dates, and minimising wastage
- Maintaining cold storage areas and ensuring correct temperature control for meat products
- Cleaning and sanitising the work area, equipment, and tools in accordance with food safety standards
- Complying with Work Health and Safety (WHS) requirements and safe food handling practices
- Advising customers on cuts, cooking methods, and product selection (in a retail context)
- Ordering stock and maintaining inventory levels (for senior or supervisory roles)
Qualification & experience
- AQF Certificate III including at least two years of on-the-job training, or AQF Certificate IV (ANZSCO Skill Level 3)
- At least three years of relevant experience may substitute for the formal qualifications.
