Position Summary

The Chef is responsible for planning, preparing, cooking, and presenting high-quality meals while ensuring kitchen efficiency, food safety compliance, and consistency across all menu offerings. The role supports daily bistro service, sports bar dining, takeaway, special promotions, and private functions while contributing to Seven Mile Bar & Bistro’s reputation for quality dining and hospitality excellence.

Task & responsibilities

Key Responsibilities

  • Plan and develop menus for Seven Mile Bar & Bistro that reflect the venue’s diverse offerings, including premium steaks, ribs, burgers, pizzas, seafood, classic pub meals, daily specials, and function catering, while considering customer preferences, seasonal availability, and promotional events
  • Estimate food requirements, portion sizes, labour costs, and kitchen operational expenses to support profitability and efficient service during daily operations, peak periods, live sports events, and private functions
  • Order and manage food supplies including fresh produce, premium meats, seafood, pizza ingredients, dry goods, and kitchen essentials to ensure consistent stock levels and cost control
  • Monitor the quality of dishes at every stage of preparation and presentation to maintain Seven Mile Bar & Bistro’s standards for taste, consistency, portioning, and visual appeal
  • Discuss food preparation processes, menu planning, stock requirements, and service expectations with manager, kitchen staff, and front-of-house teams to ensure smooth coordination across bistro, sports bar, lounge, and function services.
  • Demonstrate cooking techniques and provide guidance to cooks and kitchen staff on food preparation methods, grill operations, plating standards, and efficient kitchen procedures
  • Prepare, season, and cook a broad range of menu items in line with Seven Mile Bar & Bistro’s hospitality style, ensuring timely service for lunch, dinner, takeaway, and event customers
  • Explain, implement, and enforce hygiene, sanitation, and food safety regulations in accordance with Australian hospitality and health standards
  • Assist in selecting, training, and supervising kitchen staff to maintain a skilled, productive, and customer-focused team
  • Apply food preservation, freezing, and storage techniques to maintain ingredient quality, reduce waste, and support stock rotation practices
  • Coordinate kitchen operations to meet the demands of regular dining service, sports bar meals, takeaway orders, group bookings, and private functions
  • Support continuous improvement of kitchen efficiency, menu performance, and customer satisfaction to uphold Seven Mile Bar & Bistro’s reputation as a quality hospitality destination

Qualification & experience

Skills & Qualifications

  • Diploma or Advanced Diploma in Commercial Cookery or equivalent.
  • Minimum 1 year of previous experience as a Chef in a restaurant, pub, bistro, or bar environment
  • Strong knowledge of food preparation techniques, grill operations, and kitchen management
  • Ability to perform effectively in a busy, fast-paced hospitality environment
  • Understanding of food safety standards and safe work practices
  • Excellent organisational and time-management skills
  • Strong teamwork and communication abilities
  • Flexibility to work evenings, weekends, and public holidays
