The role:

We are seeking a talented and passionate Chef to join our kitchen team. The role involves preparing and presenting authentic Indian dishes while maintaining the highest standards of quality, hygiene, and efficiency. The Chef will play a vital role in ensuring a memorable dining experience for every guest.

Task & responsibilities

  • Prepare, cook, and present authentic Indian dishes, including curries, tandoori, biryanis, breads, and desserts, according to Kesari’s recipes and quality standards.
  • Ensure consistency in taste, portioning, and presentation across all menu items.
  • Supervise kitchen operations during service, coordinating with kitchen staff to ensure timely order delivery.
  • Plan and prepare mise-en-place before service, including chopping, marinating, and pre-cooking.
  • Monitor stock levels, order ingredients, and manage deliveries to maintain freshness and avoid shortages.
  • Ensure compliance with food safety standards, hygiene regulations, and OH&S requirements.
  • Train, guide, and mentor junior kitchen staff to maintain efficiency and quality in the kitchen.
  • Develop and suggest new dishes or seasonal specials to enhance the menu.
  • Manage kitchen cleanliness, including equipment, storage, and work areas, ensuring strict adherence to sanitation procedures.
  • Control waste, portioning, and stock rotation to optimize food cost and minimize wastage.
  • Collaborate with management on menu planning, catering events, and special promotions.
  • Maintain professionalism and calm under pressure in a fast-paced service environment.

Qualification & experience

  • Certificate IV/Diploma or equivalent overseas qualification.
  • Minimum 1 year of proven experience as a Chef in an Indian restaurant or hospitality environment.
  • Hands-on experience with Indian cuisine
  • Experience in managing kitchen operations, supervising staff, and handling busy service periods.
  • Strong knowledge of traditional and contemporary Indian cooking methods, spices, and ingredients.
  • Ability to prepare, cook, and present dishes consistently at high quality and speed.
  • Sound knowledge of food safety, hygiene, and occupational health & safety standards.
  • Excellent time management and organizational skills to handle high-volume service.
  • Team leadership and training skills to guide kitchen staff.
  • Creativity in menu development, seasonal specials, and new dish ideas.
  • Ability to work efficiently under pressure while maintaining attention to detail.
  • Good communication and collaboration skills to coordinate with front-of-house.
