Task & responsibilities
- Prepare menu
- Estimates expected food consumption and organises preparation
- Management of whole kitchen, including staff
- Delegate preparation of ingredients to use in cooking (chopping and peeling vegetables, cutting meat, etc.)
- Cook food using kitchen equipment (induction heaters, electric oven, etc.)
- Check food while cooking
- Supervise the quality of ingredients
- Ensure great presentation before meals are served
- Keep a clean, sanitized and orderly environment in the kitchen
- Ensure all food and other items are stored properly according to regulatory requirements
- Monitor stock
- Staff training sessions and coaching staff
- Keeps records of wastage
- Open and closing kitchen procedures
- Make adjustments to food items to accommodate guests with allergies or specific diet concern.
Qualification & experience
- At least Certificate IV in Commercial Cookery
- Minimum 1 year of work experience
- Ability to work with a busy kitchen, leading a team of cooks and assistants.
