Rustico at Hay Shed Hill is a busy 200-seat Mediterranean tapas restaurant overlooking the stunning Hay Shed Hill winery in the Margaret River region. Open 7 days a week and hosting over 40 weddings each season, no two days are ever the same.

We are looking for an experienced, energetic and detail-oriented FULL-TIME Restaurant Manager to join our long-standing team and work alongside our owner/operators and management team. Ensuring the smooth running, growth in trade and profitability of the venue and to assist the General Manager in managing efficient weddings and events.

Task & responsibilities

  • Lead recruitment, onboarding, training and development of management, supervisory and front-of-house staff
  • Oversee staff performance management, including appraisals, coaching, disciplinary processes and succession planning
  • Maintain strong team culture, staff morale and workplace productivity through effective leadership and communication
  • Ensure all employees are trained in company procedures, service standards and operational expectations
  • Coordinate staff rosters, wage control and labour cost management to meet financial targets
  • Monitor and drive overall business profitability, including revenue growth, food and beverage cost control and operational overheads
  • Set performance goals and financial objectives for subordinate managers and team leaders
  • Foster a professional, respectful and positive workplace environment while minimising staff turnover
  • Manage weddings, private dining and special events from planning through to execution, ensuring seamless guest experiences
  • Liaise with clients, suppliers, kitchen and venue teams to coordinate event requirements, timelines and service delivery
  • Oversee event setup, styling, menu tastings and on-the-day operational execution, including troubleshooting issues as they arise
  • Conduct post-event reviews and implement continuous improvements based on client and staff feedback
  • Ensure venue presentation, cleanliness and maintenance standards are consistently upheld across all areas
  • Develop and oversee cleaning, maintenance and risk management procedures to ensure a safe environment for guests and staff
  • Coordinate contractors and maintenance works to minimise disruption to business operations
  • Support the General Manager in strategic planning, operational improvement and business development initiatives

Qualification & experience

Previous management experience in a similar hospitality role is essential, with a minimum of 1+ years experience required. Experience within the wine or winery hospitality industry will be highly regarded. A current RSA certificate is mandatory.
